Fish Bisque Soup

Fish Bisque Soup
Ingredients :
Peanut oil 5 cl
Sweet water crayfish 110 gm
White mirepoix; 100 gm
Tomato paste 5/1 30 gm
Brandy 2cl
Rice flour 60 gm
White wine 5 cl
Fish stock 2 ltr
Tomato concasse 100 gm
tarragon fresh 10 gm
Cream 2dl
Method :
- saute cray fish and mirepoix in oil.
- Add tomato paste and continue sauteing.
- Flame with brandy.
- Add rice flour and stir.
- Add wine.
- Add fish stock, tomato concasse, tarragon and seasoning.
- Bring to a boil and simmer for 10 minutes.
- Remove tails from cray fish.
- Pound carcasses and put back in soup.
- Simmer for 45 minutes.
- Strain through cheesecloth.
- Add cream and adjust seasoning.
- Garnish with diced cray fish meat.
(Above ingredient is served for about 10)
